Allocation Optimization Problem for Peruvian Food Bank
    (IGI Global, 2020-01-01)
Food insecurity is a recurrent condition in which members of a household do not have enough food to cover their nutritional needs; this condition contributes to increasing social vulnerability of those affected. In Peru, there are more than 9 million people who suffer this condition, which generates malnutrition and anemia, mostly in children. On the other hand, the waste of food is associated with production the large amounts of greenhouse gas emissions that affect global warming. According to reports in Peru, 20% of what is food produced becomes waste. This scenario in terms of food for Peruvians represents 3 billion calories in wasted food that could feed 2 million people. The Peruvian Food Bank manages food donations, ensuring this food can reach people in need through humanitarian aid entities. This applied research work uses the tools of operations research to determine a solution to the problem of maximizing the combination of food orders to be distributed based on their total nutritional value to the beneficiaries, seeking maximum coverage and minimum logistic costs.

A review of root, tuber and banana crops in developing countries: past, present and future
    (Wiley, 2020-09-16)
For many of the developing world's poorest farmers and food-insecure people, roots, tubers, bananas and plantain crops (RTBs) serve as a critical source of food, nutrition and cash income. RTBs have been particularly important in areas where local agri-food systems are under stress. Under such circumstances, growers, processors and traders often see opportunities to improve food security or increase their incomes with those crops due to shifting tastes and preferences for food and non-food products. Since the early 1990s, cassava output surged in sub-Saharan Africa, while potato production expanded rapidly in Asia. RTBs are consumed by over three billion people in developing countries with a market value of US$ 339 billion. This paper analyses the major changes in production, utilisation and trade of RTBs over the last six decades, assesses estimates of their future trajectory and offers recommendations so that they might achieve their full potential.

The impact of the Peruvian Ollas Comunes´ (OCs) resource barriers on vulnerable beneficiaries
    (Taylor & Francis, 2025-08-27)
Peru has the highest food insecurity in South America. Ollas Comunes (OCs) are self-managed food pantries organized by mothers. The objective of this study was to analyze the impact of the OCs' resource barriers on their beneficiaries. Data were collected from 445 main OCs in Metropolitan Lima between 2020 and 2021. A negative binomial regression approach was applied to food rations and the number of children, elderly, pregnant women, and people with chronic disease who attended the OCs. The outcomes may be used by governments to enhance the base framework of OCs to improve the food security of their beneficiaries.
